Chefs

Davey Aspin moved to Inverness in September 2006 from his hometown of Manchester to work at Abstract Restaurant. In March 2007 he moved to Rocpool Reserve as Executive Chef.

Starting his career in Manchester at the Avant Hotel as a Commis Chef in 1993, Davey soon progressed onto 2 Star Michelin establishments, working for Paul Heathcote and John Burton Race. During this time Davey also worked for Marco Pierre White at L'Escargot and the Oak Room for 2 years.

In 2001, Davey worked as a Senior Sous Chef at Northcote Manor, another Michelin Star establishment before returning to Paul Heathcotes restaurant, Longridge as Head Chef where he regained the restaurant their Michelin Star.

In 2004 he returned home to Manchester as Head Chef of Establishment Restaurant where he stayed for 2 years before moving North to Scotland and Rocpool Reserve.

Not only has Davey worked in many well noted restaurants in Britain but he has also participated in stages throughout England and Europe including:

  • Georges Blanc, France
  • Vassa Eggen, Sweden
  • Gordon Ramsay, London
  • The Square, London
  • Pool Court, Leeds
